In the 5L pot place the onion, carrot, capsicum, stock cubes and 1 cup of water. Bring to boil and allow to boil until the water is evaporated. |

Add the rice, beans, lentils and oil and combine. Fill up the pot with water and bring to boil, stirring occasionally. |

When beans are soft add the parsley and remove from heat. Enjoy with toast and chili or red onion. |
