1kg beetrootboiled in skin, peeled and grated

50g celeriacgrated

1/2 capsicum

1 carrotlarge

2 potatoesmedium

1 bunch spring onions

2 stock cubesMassel chicken style

400g tomatoesdiced, pureed

2tbs lemon juice

1tbs olive oillight

Done

Chop the carrot, capsicum, potatoes and onion in small cubes. In a 6l pot filled half way with water put all the fresh veggies to boil until soft. |

Add the beetroot and allow to boil for further 5 min. |

Add the tomatoes and water to fill up the pot than bring to boil again. |

Add the lemon juice and the oil and remove from heat. |
