Ingredients

1kg beetroot boiled in skin, peeled and grated
50g celeriac grated
1/2 capsicum
1 carrot large
2 potatoes medium
1 bunch spring onions
2 stock cubes Massel chicken style
400g tomatoes diced, pureed
2tbs lemon juice
1tbs olive oil light
salt

Done

Chop the carrot, capsicum, potatoes and onion in small cubes. In a 6l pot filled half way with water put all the fresh veggies to boil until soft.

Add the beetroot and allow to boil for further 5 min.

Add the tomatoes and water to fill up the pot than bring to boil again.

Add the lemon juice and the oil and remove from heat.
Serve hot or cold
