Ingredients

Adjust Servings:
1kg potatoes boiled in skin
cups white flour
1 tbs salt
3-4 litres water
2 cups corn crumbs
1 cup organic raw sugar
3 tbs sunflower oil
500g plums
raw sugar to cooat the plums

Prepare the plums

Wash the plums, cut them into small wedges and coat them in sugar.

The coating

In a frying pan roast the corn crumbs. When golden, remove from heat, add the oil and sugar. Set aside.

Dumplings

Peel the potatoes and mash. Mix in the oil and salt. Gently fold in the flour, without kneading much the dough.Allow the dough to rest for 5 minutes then shape it into small balls the size of a 50 cents coin. Take a ball, flatten it and place a plum piece in the middle. Fold the dough around it and shape it gently into a ball again. Repeat the process for the rest of the dumplings.

Put about 3-4 litres of water to boil in a wide pot.When the water is boiling add 1 Tb of salt and the dumplings.

When they start to float, remove them with a slotted spoon. Place them into the crumb mixture and coat them with crumbs. Enjoy hot or cold!
