2 cups corn crumbs

500g plums

Prepare the plumsWash the plums, cut them into small wedges and coat them in sugar. |

The coatingIn a frying pan roast the corn crumbs. When golden, remove from heat, add the oil and sugar. Set aside. |

DumplingsPeel the potatoes and mash. Mix in the oil and salt. Gently fold in the flour, without kneading much the dough.Allow the dough to rest for 5 minutes then shape it into small balls the size of a 50 cents coin. Take a ball, flatten it and place a plum piece in the middle. Fold the dough around it and shape it gently into a ball again. Repeat the process for the rest of the dumplings. |

Put about 3-4 litres of water to boil in a wide pot.When the water is boiling add 1 Tb of salt and the dumplings. |

When they start to float, remove them with a slotted spoon. Place them into the crumb mixture and coat them with crumbs. Enjoy hot or cold! |
